Instructions
1/2 average avocado
1/4 cup coconut milk or heavy whipping cream
1/4 cup fresh spinach
fresh mint or mint extract to taste
1/4 cup vanilla or plain whey protein or egg white protein powder or collagen powder or plant-based NuZest
2 tbsp pistachio nuts
seeds from 1/2 vanilla bean or 1 tsp sugar-free vanilla extract
3-6 drops of liquid Stevia extract or another sweetener if desired
1/2 water and optionally ice cubes
Method
Wash the mint and spinach, halve and peel the avocado and blend until smooth with the rest of the ingredients.
Serve immediately.
